Simon Doolin: the farmer behind Lancer, North Star NSW

Simon Doolin farms at North Star, NSW, in the heart of Australia's renowned Golden Triangle. His farm grows the Lancer wheat behind Provenance Single Origin Lancer Flour, with every bag traceable back to the Doolin soil.

 

The Doolin story began in 1924, when Simon's great-grandfather RJ Doolin purchased Myall Downs; he also famously brought the first triticale to Australia in a matchbox. A century later, Simon is the fourth generation of his family to farm at North Star, working the Cleveland property with his family, while his father Malcolm and brother Angus work neighbouring farms.

 

That pioneering spirit continues today. Simon combines generational wisdom with cutting-edge soil science, investment in technology, pivot irrigation systems and on-farm storage, and he consults and collaborates locally and globally on farming equipment, techniques, crop breeding and soil stewardship.

The quality of each Lancer harvest is the result of five to seven years of preparation before the wheat is even planted. Simon's rotation runs barley, chickpea, wheat and sorghum, followed by an 18 month rest period. Each crop serves a purpose beyond its harvest: chickpeas fix nitrogen, sorghum builds organic matter, and every planting leaves residue that breaks down at different rates, creating the living soil ecosystem that gives Lancer its balanced protein (11.5% to 12.5%) and consistency.

 

For Simon, farming is not just about this year's crop. It is about building systems that will thrive for generations, a future he wants to help build for all of us.
